Cooking With Kimes: Bourbon Bacon Pecan Pie
This sweet and smoky pie has it all! It is boozy, bacon filled, and easy to pull together for your holiday parties.
Ingredients:
1 pie shell
5 bacon strips cooked and crumbled
3 eggs
1 cup corn syrup
1/2 cup of brown sugar
2 cups of pecans
4 tbsp. butter - melted and cooled
1 tsp. vanilla
3 tbsp. bourbon
pinch of salt
Directions:
Preheat oven to 350°
Whisk together eggs, corn syrup, and brown sugar until smooth. Add in butter, vanilla, bourbon, and salt. Whisk well.
Lay half of the pecans at the bottom of the pie shell. Sprinkle half the bacon, and repeat with remaining pecans and bacon. Then pour over liquid mixture.
Bake in preheated oven for 40-50 minutes, or until the center of the pie looks puffy and only slightly jiggles.
If the crust is browning too fast, just tent the pie with a piece of foil to prevent burning. Remove from oven and rest on a wire rack until completely cool. Serve with cinnamon whipped cream, or vanilla ice cream.
